Arepa topped with guacamole and hogao, served with barrel-roasted chicharrón.
Loma de los Bernal · Medellín
Our star dish: pork belly hung and slow-roasted in a barrel, golden outside and juicy inside. We serve it at breakfast and lunch, one block from Cerro de las Tres Cruces.
Calle 9 #84A-02, Loma de los Bernal, Medellín
Why the barrel
Inside the barrel the pork belly hangs and cooks slowly with heat all around it. The fat renders, the skin turns golden and crispy, and the meat stays juicy with a smoky flavor you just can’t get from a pan.
That’s why it’s our most ordered dish: at breakfast with arepa, fresh cheese, eggs or calentado, and at lunch as the protein of the day.
